This dish is wonderful in two ways. It takes advantage of the produce that is coming into season and it sets your palate for fall. It smells amazing roasting in the oven with the orange and cinnamon wafting around the kitchen.
Ingredients:
1 medium sized winter squash
1 Tbsp. butter
1-2 Tbsp. honey
2 Tbsp. orange juice
1 Tbsp. lemon juice
1 tsp. cinnamon
pinch of ground ginger
1 tsp. grated orange rind
- Peel squash and cut into chunks of fairly thick slices. Arrange in bottom of an oiled casserole.
- In a small pan, melt butter, add honey and juices, stir until well blended. Pour over squash pieces.
- Sprinkle with spices and orange rind and bake 350 degrees for 40-45 minutes.
- Baste occasionally.
The recipe was from a healthy book, can't remember which one, maybe Superfoods Rx. I have tried it with acorn squash and butternut squash. They are both good. I'll try it next with pumpkin which is on the Superfoods list.
