Foodie Friday: Strawberry Soup

I haven't had many cold soups.  I have always wanted to experiment with them.  On a whim last night I had a pound of strawberries in the fridge that no one was eating and I decided to make strawberry soup.  It was a huge hit.  The teens are begging for more.  Imagine teenage boys eating strawberry soup?  It is sweet, cool, refreshing, and just perfect for your table in June, the peak of strawberry season.
I started with a recipe from cooks.com , but I adapted it to what I had on hand and it really isn't much like that recipe.  So here is my version.
* Note-added  kiwis no one was eating either and the flavor it added was perfect.
Ingredients:
1 1b. of ripe strawberries
1 TBSP of fresh squeezed lemon jucie
3/4 cup of sugar
1 cup of water
1 cup of half and half
1-2 kiwis (optional)
  • Wash and top the strawberries and kiwis, cut into slices.
  • Place in large saucepan with lemon juice, sugar, and water. 
  • Bring to a boil and then place on medium heat and simmer 8 minutes.
  • Take saucepan off stove and let cool.
  • After berries and kiwi have cooled, place one half of soup in blender with 1/2 cup of half and half and puree.
  • Pour last half of soup into blender with last 1/2 cup of half and half and puree whole recipe.  
  • Chill in fridge and serve.
* This was the first time I made this soup.  The kids liked it this sweet, but I might try it   again with 1/2 cup of sugar. 
  Makes 4-6 servings.
