Sweet Potato Pie

Normally I would consider this a fall or winter pie.  But, today I am making it with a tropical twist, Caribbean spiced rum.  So, don't let this overlooked vegetable stay off your menu in the spring or summer.  This pie is similar to pumpkin but, this a lot lighter and a bit more fluffy due to the whipped egg whites folded in.

2  9-inch unbaked pie shells (traditional size)
2 large sweet potatoes (boiled then pureed to equal 1 1/2 cups)
1 cup of brown sugar
2 tablespoons light molasses
1 teaspoon cinnamon
1 teaspoon ginger
1/4 teaspoon salt
1/4 teaspoon ground cloves
1/4 teaspoon nutmeg
3 eggs separated (yolks from whites)
1-12 ounce can Milnot
2 ounces Puerto Rican rum


Preheat oven to 400 degrees.  Peel and cube sweet potatoes and cook till soft in boiling water.  If pie shells store bought thaw on counter.  When sweet potatoes cooked drain water and puree with hand held speed mixer.  Measure out 1 1/2 cups of puree place in large mixing bowl.  Add brown sugar, molasses, cinnamon, ginger, salt, cloves, and nutmeg.  Mix in 3 slightly beaten egg yolks, the Milnot, and the rum.  Beat the egg whites until stiff and fold into the other ingredients.  Pour into two unbaked pie shells.  Bake 40 minutes with edges covered with foil until last 20 minutes.  It is done when a toothpick comes out clean.

Home Sweet Home #78

Hello and welcome to Home Sweet Home!  I have been wanting to do a post on decorating with nautical accessories for summer.  So, I have a few ways here I have added the nautical/Beach look to my home.   First, it is so easy to add some shells or starfish anywhere.  It also looks great to use a map as a table runner, tacked up on the wall, or even framed.

Model ships really carry the nautical theme well.  All of my accessories are basically vacation souvenirs. 

Ticking would be the fabric I think of first for a nautical theme.  Rope in a hurricane or as a napkin tie would be great too.

Vintage beach themed travel posters are also a good bet.  This one hubs and I picked this up on our honeymoon years ago.
So there you have it...several ways to bring the nautical/beach  look home for summer.

Scalloped Tomatoes

This time of year the tomatoes are plentiful and this is the time of the year to make this dish.  This is one of my all time favorite dishes my Grandmother Patty always had on the Sunday dinner table.  With fresh tomatoes from the garden the flavor of this dish is unbeatable.

Ingredients:
6 fresh ripe tomatoes, peeled and chopped up
2 cups of chopped up stale French Bread
1 tbsp to 1/2 cup of sugar (season to your taste)
Salt and pepper to taste
3 tbsp butter

Skin and chop up tomatoes.  Place the tomatoes in a buttered casserole.  Add sugar, salt, and pepper and stir.  Chop up the French Bread and layer on top of tomatoes.  Dot the bread with the butter.  Bake at 350 degrees for 30-35 minutes.   Take out of oven and let cool for 10 minutes and serve.


Variations on this include adding garlic, chopped onion, basil, and some grated parmesan.    If you make without fresh tomatoes you can use a #3 size can of tomatoes which equals 4 cups of diced tomatoes.

Christmas in July

I found this Mary at a grocery store floral department and it inspired me to create this Jean d'Arc style Christmas vignette.  A little Christmas in July, it was only 106 here this weekend!

I found these great pale aqua shutters at an estate sale.  
The shutters were the perfect place to show off some vintage Christmas postcards.
 
I have always loved this postcard.  It looks very much like fall but it is a Christmas postcard.

Strawberries with Lemon and Honey

In the latest issue of Delicious Living that I picked up at the health food store I found this recipe that was so simple and easy I couldn't believe I hadn't tried it before.  It was my kind of recipe, fresh food and three ingredients!  Try strawberries like this, I am sure you will love it! 

Strawberries with Lemon and Honey

1 pint (1 pound) of strawberries
2 TBSP of honey
3 TBSP lemon juice, Meyer lemon if possible

Rinse and pat berries dry.  Remove stems and slice.  Drizzle honey and lemon juice over them.  Toss with a rubber spatula.  Cover and refrigerate for 30 minutes or more. Serve.

Home Sweet Home #68

Hello and welcome to Home Sweet Home!  It is time to kick off summer fun this weekend and channeling the beach in the backyard is a lovely way to start it off.

Cookout Worthy Baked Beans

I can't believe Memorial Day is this weekend.  I keep thinking it is the 31st, but not this year.  This weekend is the official start to summer.  Are you firing up the grill and serving cookout food?  We usually do.  I don't usually serve my baked beans right out of the can.  As my sweet Grandma Patty would say I "doctor them up" a little.  
Here is what I add:
1 heaping TBSP of brown sugar
1-2 TBSP of Sweet Baby Ray's honey BBQ sauce 
1/2 of a sweet onion (Vidalia) chopped
1 potato (Russet) peeled and chopped up

I mix this all in and bake at 350 degrees for an hour.  Serve warm.  This was all added to 1 standard can of ready made baked beans.
